Energy in the tank is calculated by taking the difference between the water in temperature and the average temperature of the tank, and multiplying by the mass of water in the tank (and converting to kWh). The second value displayed is referenced to a fixed value of 110F, a reasonable 'minumum' hot water temperature. It thus is a subjective representation of how much hot water remains.
